Hope you're feeling better. I have (hopefully) had the two worst days and with a bit of luck, I should be on the way to get better now.
I (obviously) can't say anything regarding Steam Deck; so general reply:
Official SD Formatter applies the standard file system according to the standard.
SD: FAT16
SDHC: FAT32
SDXC: exFAT
Journaling filesystems have traditionally been a problem on SDs (or older flash devices like USB thumb drives) leading to low performance and even decreased lifetime. No idea if this is still a problem nowadays.

If your NAND was hardbricked, then just buy another Wii. Or go with the dirty NAND flasher method.

and if i find the sd card i have my NAND backed up on, i can not only restore the NAND if i solder the right part in, but i can also put my NAND on dolphin, then i can play dolphin online, like PMEX Remix or MKWii Riibalanced -
