Is there a block that has the complete Pokedex for Pokémon Sword? I would like to have all shiny Pokémon and their forms.

Have you checked pkhex page, there is a lot of save files with legal pokes, on shiny and normal

Well the thing is that since I progressed so much in my save. I dont wanna erase it, yknow? I dont wanna lose all that progress.

You can just extraxt the .pk files and inject to your save

Download a full file with all pokes, open it on pkhex and extract pk files
