You don't unlock costumes until partway through the game. Until you unlock them, the costume-granting amiibo will act like other amiibo and give you random items.

I can confirm 100% as someone who has these costumes now, the instructions in this thread do work, but the amiibo otherwise don't give the same item every time, they just give you various smoothie ingredients like BOTW/TOTK's amiibo give food items.

you missed the following

Any Link amiibo gives you : Red Tunic
Any Princess Zelda amiibo gives you : Blue royal dress
Any Ganon amiibo gives you : Black cat suit

these are the only way to obtain these outfits, only alternative colors will be obtained through normal gameplay

It seems to be a bit more complicated than this unfortunately.
First you have to get to the point in the game where clothing are activated (as previously mentioned)

But even after that it seems like you can only get one dress per day?
I got the blue dress from a Link amiibo.
After that I couldn't get any more clothes from any Link, Zelda or other "Legend of Zelda" amiibos like Guardians etc, they all dropped food after I got the blue dress.

And even though I'm using the unlimited amiibo code I still get the message that I've already used that amiibo today on some cards.

The game also doesn't seem to care about the amiibo's serial number, just it's ID, for example I've got two Wolf Link amiibo cards that I've put different serial numbers on and both cards gave me the "max today" message even the first time I tried to use them.
So that makes me think that the Wolf Link amiibo is supposed to give me clothes, but all amiibos with clothes gets blocked for a day once you got your first piece of clothing?

tldr; I won't bother with amiibos any more, just getting apples and salt isn't worth the hassle, at least in previous Zelda games you got some weapons that you could use, and I was hoping to at least get a fun/unique echo from Toon Zelda :(

got the red tunic from smash bros link, black cat from smash bros ganondorf and blue dress from smash bros sheik, all one after the other on the same day without any cheats

Strange, I tested Smash bros Ganondorf now again, all I get is fruits, tried 15-20 times.

Edit: I tested Smash bros Sheik too, only fruits, I tried restarting the game and tried Ganon and Sheik again 15-20 times, only fruits.

Edit 2: I turned off the cheat code, changed the date of the console and tried again.
This time I got the red tunic from smash bros link and the black one from smash bros ganondorf, just like you got @ut2k4master.

So the amiibo code "works", but seems to block amiibos from giving you clothing, If I remember correctly I got my blue tunic before I tried the amiibo cheat code.

So a new tldr; if you want the clothing, change the system clock to get passed the 3-per-day thing if you need to and not the amiibo cheat code, only use that to get unlimited fruit.

I'm not really any further than that, but it would make sense that the game won't give you costumes for amiibo until it's already introduced costumes in gameplay.

The one problem you can run into with this is with the black cat costume, the original costume that one is a variant of is supposed to be gotten as part of a minor side quest, having that alternate costume already would short circuit that quest. They really should have had some added a conditional to that alternate costume that you couldn't get it until you have the original.

Through gameplay:

You have to clear all the challenges in the sleep dojo. I'm not sure if you need to get the faster times for all challenges or not.

Edit: not all the challenges are available until you're quite far through the story (beaten most of the bosses), so presumably you can't get the green tunic before then.
