Ok, first of ysmenu doesnt work on the itouch,
which means it cat boot roms with moonshell.
But if you do want to have a gui like moonshell use the hacked m3sakura.

the hacked sakura doesn't load ROMs afaik. at least, if you're talking about the DLDI version. Or is there some other version I don't know about?

I believe your out of luck there is nothing that will load roms on a itouch besides its original formware
