After working with Nintendo as far back as 2013 goes , Yasuaki Iwata steps down as one of the composers at Nintendo.

A quick search led me to the Nintendo Wiki. Here's a list of works:
  • Super Mario 3D World (2013) - Music[2]
  • Mario Kart 8 (2014) - Music
  • The Legend of Zelda: Breath of the Wild (2017) - Music
  • Expansion Pass (2017) - Music
  • Mario Kart 8 Deluxe (2017) - Music
  • ARMS (2017) - Music
  • Super Smash Bros. Ultimate (2018) - Music Arrangement
  • Animal Crossing: New Horizons (2020) - Music
  • Hyrule Warriors: Age of Calamity (2020) - Nintendo Zelda Team
  • Mario Kart 8 Deluxe — Booster Course Pass (2022-2023) - Music
Unfortunately, I have little to no exposure with these games. How were the compositions?

I would say that they're pretty good pieces of music. The least that I've liked on this list is Animal Crossing but that's because almost every song in this game uses the same motif as the main theme (and quite frankly, while Wild World and City Folk have done the same thing, at least the style of music was a bit nicer)

Who?
No, really, haven't heard or read his name.

They were one of the main composers for a couple main Nintendo games in the early 2010s.

Behold one of the most magical moments in my gaming life, in a game I otherwise find a little bland and way too easy

I don't know how many and which tracks in the Mario Kart 8 Deluxe were composed by him but the music in that game is typically great. Breath of the Wild had some excellent music, although you didn't get to hear it that often. Particularly the Rito Village comes to mind, which is my favorite track in the game. And the accordian tune based on the classic Zelda theme that you find a Rito playing in various spots around the world is also very memorable. Super Mario 3D World also had some great music. Smash Bros is the usual, great remixes and medleys of already great songs. I pretty much like all of them, had no idea who this guy was or that he had any involvement in them, I guess he was more of a behind the scenes kind of guy. But it sounds like he's at least partly responsible for some of Nintendo's most memorable tracks in the past decade.

I think it's tougher to stand out in today's industry. For one, games are made by hundreds of people, so any one name is going to be buried in the credits. Second, the pioneers in the industry, like Manami Matsune and Koji Kondo, are the ones people are most likely to remember.
