hot rice + raw egg
hot pasta + raw egg (carbonara)
hot meat + raw egg (fricassee)
acids (lemon or vinegar) + raw egg (mayo sauces)
alcohol + raw yolk (zabaione and similars)
alcohol + raw whites (gin fizz and other cocktails)
cheese + raw egg (tiramisu if completely traditional)
the yolk in many dishes (sunny side up pan fried eggs, soft boiled, etc.) and sauces
raw eggs are definitely “a thing” around the world
also sometime it depends where you draw the line (is the runny part of a proper omelette really cooked? as in sterilized?), as with the hot pasta
also check your local laws about the handling and washing of eggs, I kinda remember reading that in the US raw eggs are more dangerous for some reason
