Why not just unplug network LAN cable (If used), then delete your WiFi connection details on the PS5.

I keep mine online but it doesn't update by using a custom DNS, but only because I use Chiaki so I can stream to Switch and PC. There probably isn't many more uses for it than that because you need to block Sony's servers.

Why not just do Settings > Network > Settings > Connect to the Internet (Toggle On/Off). There's also System software update option.

You can uncheck automatic updates, but you won't even be able to install an update to a game without it forcing you to update your firmware. I'm not even sure it serves any purpose to not just remove internet except in my case to use an alternative DNS server to use Chiaki, otherwise you may as well just stay offline.

Also it will nag you to update your system every time you try to put your PS5 to sleep or turn it off.

It would be new to me, that a PS5 is able to boot without a wifi chip on board.

If you don't want to update, don't reset and don't connect your PS5 to the internet. And don't try newer games which need higher firmware.
