Can I do SNES or Genesis, or Atari?
Would love to get some Atari Games on there, too.
AFAIK there's only a GB and a NES emulator built-in. I could be wrong, though. I never really tested anything else cause DS is better in emulating them all.

There's NES, GB/GBC, SMS, and PCE. All those emulators are ancient though, so even if you want to stick with GBA-based emulators, you'd be better off downloading the newer versions of each emulator and making a compilation the old-fashioned way. Emulators for the DS are generally better (though NES DS has some issues that PocketNES fixed long ago) but it's your choice about which ones to use.
In the realm of commercial titles, there's Activision Anthology, a compilation of a bunch of old Activision titles. It doesn't run at full speed, and there's no music, but it's certainly an option, and has a bunch of great games on it (from before Activision sucked).

Ontopic: Yeah, at first I always wondered what PCE was, too, and I couldn't believe it was TurboGrafx
its PCE because it also goes by the name PC-Engine in Japan.
