Believe it or not, I've seen worse. There is one method where the chef takes a live fish (I think it has to be a bigger fish than that for it to survive the process), scores it, and very quickly pan fries the tail end, just enough to cook the skin. It is served immediately, before it dies.

IIRC I saw this on one of Anthony Bourdain's shows.

The freshest i've had was Tuna loin pulled right from the body (read: dead) of an 80 lb. tuna. It was AMAZING. I'd do that again in a heartbeat. However, still living fish is just odd for me :wtf:.
