You can get a Dual NAND yes.
However, keep in mind that you'll need ONE HDD for your unhacked NAND and ONE HDD for your hacked NAND.
Also, don't use your gamertag you use on XBLive for your hacked NAND!
Updating is pretty simple.
Your hacked NAND needs to be updated with JRunner (I wrote a tut about it here) and your normal Live enabled NAND can be updated by XBLive.
To select NANDs, you'll need to flip a switch on the Dual NAND chip you got installed.
That thing usually sits somewhere on the case of the console.
Yes, otherwise you won't be able to use the Xbox emulator/install games/store save games etc.
You can store savegames/DLC on a USB drive but it's best to get a HDD for it.

The hacked NAND usually gets an update a week after the LIve one is updated.
I don't know where you read that information but that is false.
Redesigned Slims are indeed Corona V5 and V6's but their not designed for to be the Xbox One....
Coolrunner comes with the basic wiring to install it and the DemoN the same.
You'll have to get a NAND-X or SD Dumper as well to dump your NAND (depends on your console)
A good guide would be to use JRunner and any guide found on the TX website.
I got no clue if the DemoN works with a 4GB NAND....
I don't think so tho.
But if you got a 16 MB one then it prolly will.
Have you got a Slim with a HDD or with 4GB?
Then you got a 4GB NAND which you'll need to dump with an SD Dumper ;]
