Has the Vita power enough to run DC?
If my first gen Moto X could, then why not?
I mean, it runs at a bigger resolution (720p) and has not a beefy GPU like Vita has.
I think it's possible given the better Vita GPU.

I had a PSVita which was 1.70 I belive, I updated it at 3.60 straight away. It was like 5 days after Henkaku happened. So I don't know if there are any benefits, by a direct experience.
What I know is that at a lower firmware (3.57?) there's the ability to play PSX isos using Sony's Emulator under PSP emulation, exactly like the bought games from the PSN. However right now RetroArch has an acceptable PSX emulation, and in a month could arrive the same feature for 3.60 (it's possible, it's only that TheFlow is still working on it). PSP emulation is pretty much available freely, apart from PSX emulation, right now. Most of the homebrews (lastest ones at least) are only 3.60 compatible, as Henkaku offers features older exploits didn't have.
My opinion would be to go to 3.60, but if you're curious, you can do some researches about it, and take a decision. Remember: after an upgrade, there's no downgrade.

For PSP games and homebrew, you need to install Adrenaline, which requires you have a PSP demo on your Vita.
Here is a picture of my PSP on top, and Vita running Adrenaline on bottom. No PSP screen compares to a Vita.My Vita is the phat version with OLED screen, which I like more than a Vita Slim.

It's not possible to transfer a demo from a PS3 to a Vita any more? I still have the demo on my PS3 that I transfered to my Vita to install Adrenaline, and wanted to do that same process for another Vita for my brother.
Boxarts worked for me. I did exactly the same as you did.
Double-check if the names of the games (both the filename and the displayed name inside the playlists) are the same as the pictures (or vice-versa).
