Questions about Jailbreaking ipod touch

Every time Apple comes out with a new firmware, an updated version of Jailbreak comes out right?
So if I want to update to the new Jailbreak, do I have to restore the ipod touch to the original firmware, or can I just update from the current jailbreak?

Is Jailbreak an actual custom firmware, or is it just a method (process) of modifying official firmware to enable you to install 3rd party apps?

I'm no expert; but I think now, since firmware 2.1, you update regularly through iTunes (doesn't remove any of your music/settings/content). Then run the Jailbreaking tool which modifies the currently installed firmware on your iPod, adding Cydia/Installer etc.

A lot easier than the older versions that normally meant everything on your iPod would be wiped.
