Android Picked up a Moto E5 Play to root, got any advice/experience to share?

I apparently need some T-Mobile apps to do various things on it, are they open source? Are there any caveats I need to follow to avoid losing service, or am I good to go?

How does a cell phone company determine the service I get, the ID of my SIM card in their data center somewhere?

I'm a total noob at phone hacking.

Phone company doesnot decide the service you get. It is decided by the network that you use.
