I haven't seen anything saying that a prototype Cocoto Kart Racer for XBOX exists. Do you have a link? Saying it exists I mean.

Here is some discussion about it on AssemblerGames it doesn't work unfortunately, however still one for the beta collection if your in to that sort of stuff.

Of the ones I listed Kameo and Revolt are my favorites.
