Is there anyway to use Wiimmfi just with LetterBomb/Smash Stack by switching the HackMii files with the Auto Disk Patcher files?

Have you tried it? Any exploits will just load a boot.elf or boot.dol file off the root of your sd card, so you should be able to launch pretty much anything. If it requires AHBPROT though (I don't know if the patcher does) then it won't work properly as AHBPROT requires a channel to be installed with the proper flags that then launches the app (like the homebrew channel, or a forwarder channel).
