Well that depends on:
- How easy the game is to hack and what tools are available (a lot of cases custom tools have to be made).
- The amount of text/graphics to translate.
- If you can translate the required text, in your case English to Greek.
If you are interested, I can help you translate Metal Slug 7 into Greek. While the translation won't benefit me, it will help me improve my hacking skills (yours too) and it will be fun.
I can help you hack the require text/graphics. You would just need to provide the Greek translations.
Now looking at Metal Slug 7 (US) (using DSLazy to unpack the rom, google is your friend), there is a folder called 'font'. Inside is the EU and JP font files in NFTR format. There is a tool on GBATemp (just search the title) which allows the use of modifying the EU font file.
This file contains 221 Tiles size 13 x13 and the width can be modified as well as the Mapping (two hex byte) value for each letter. What you will have to do is list all the required letters used in the Greek language (I hope there are less than 221
) and then a table can then be put together. Also a suitable font would have to be use.
In the same folder are 5 files for most of the main text in the game. The US version just uses the _us.dat files. Editing the text is really easy, just got to figure out how the pointers work (where each text starts).
The other text is consist of graphics. I have let to look into this format.

EDIT: Okay, editing the text is easy. However there seems to be a fixed width font some of the text uses that I'm trying to find. Graphics wise, I got to see what format is used and locate the correct ones.
