If you're into South Park, TFBW has RPG elements. Not really an open world, not very hard but still fun to complete as long as you are receptive to SP humour.

Salt and sanctuary 2D souls game
Battle Chasers Nightwar, it's a turn based RPG, not an open world though.
Fire Emblem Warriors is nice but I think it's only good if you enjoy Fire Emblem franchise.
Shovel Knight: Treasure Trove, Retro City Rampage DX, Sonic Mania (Plus), Night in the Woods, Cave Story+ are all smaller games I'd recommend.

More like if you enjoy the Warriors franchise. Sure, the settings and the characters are from Fire Emblem with weapon triangle thrown in, but the gameplay is still mainly Warriors style.
Nah I detest Warriors. I only play this one because of the Fire Emblem characters.
Yeah, characters. Even on that front, the representation from the series is pretty uneven.
I mean its technically a JRPG though it has very small traces of JRPG theres dragon quest builders which has a demo
Yeah that was extremely fun and I'm normally not into the kind of minecraft games. It's Minecraft with some quests.
Also @MightyMoe I tried out Punch Club and finished it last night, also very nice. Give Golf Story a shot, think you'll like it

But it's a great game.
You've got to give it some time! Those are the Bethesda mechanics - skyrim and fallout (PC) are very similar that way. But once you get used to it, they are great games that will suck many hours from your life, lol
