You're going to need redsn0w to do this. You can download the latest release (0.9.13dev4) for PC or Mac OS X here. https://sites.google...com/files/home/ On Windows, you'll need to run it as administrator for it to do everything you need to to. You'll also need the appropriate firmware that you want to restore to. If you don't already have it, you can use this website http://www.felixbrun.../iPod/firmware/ which will download it directly from Apple's servers for you (which means you won't be pirating it). Lastly, you'll need iREB which you can get from the wonderfully simple http://ih8sn0w.com/ site.

In redsn0w, click Extras, then SHSH blobs, then Stitch, then IPSW. After you've clicked IPSW, you'll need to navigate to and select the firmware (.ipsw) to which you'll be restoring. After that, click Local, which will prompt you to navigate to and select your SHSH blobs file. Once you've selected it, redsn0w will work on its own for a couple minutes building a new .ipsw file for you. Once it's finished, make sure your iPod is connected to your computer and run iREB, then follow the instructions iREB gives you. This will put your device into DFU mode and uploads a couple files to it that will allow it to be restored. Click in iTunes to the firmware that redsn0w built for you. After iREB has finished, open iTunes and Shift + Click Restore to navigate to the firmware that redsn0w built for you. iTunes should do the rest of the work for you.

Yeah I just upgraded my iPhone 4 to ios 6, and I gotta say even with the cydia tweaks (like the maps etc) i gotta say it pretty poor. In the process of downgrading now, bit of a pain in the ass but oh well
