I'll buy an Xbox One soon, and my cousin has quite a lot of Xbox One games on discs. Do I need to buy those discs as well, or can I just copy them from his disc to my Xbox's hard drive with him still being able to use the disc afterwards?

It would be nice if you could copy them, but there's no hack to be able to play backups on Xbox One.

Is it then possible to format some of my empty discs and copy the files from my cousin's discs to mine and run it like that?

No you can’t do anything like that on an Xbox one yet

The only thing you can do is account sharing, but you need to buy digital games and not disks

What your trying to achieve isn't possible yet. As of E3 this year was the first actual breakthrough in homebrew for Xbox one.
A common technique for this type of thing you are trying to do is called a Brazilian Hack which is basically a cloned hdd. But please dont pirate and just support the devs by actually buying the game
