I don't think this is possible, people have tried merging data from the update cias into the romfs so that hans would load both but I think all they were able to really do was get it to show on main screen that they were on latest version but it didn't actually act as the latest version.
Or at least they tried with Pokémon and it didn't really work out.
I think best bet would be to have one of those bundles that came with MK7 pre-installed, that one comes as 1.1 out of the box so it should allow you to play online while using HANS.
Maybe you could see if you can just download that cia and see if you are able to extract the romfs from it, make edits to that one and see if HANS lets you use it on your MK7. (It might act as if they are two different games and might not allow you to load the romfs, but idk, worth a try.)
