Wrong. I'm a Muslim so I should know.
For what it is worth merely being of a religion seldom seems to confer expertise in it. Or if you prefer presuming you have been to a mosque then would you have rated all those around you that mainly just pray and listen to whatever comes out of the mouth of the imam that day before wandering off to carry on with their day as any kind of expert, yet to deny them their belief would be probably considered rather poor form no?

Secondly it may depend upon what branch of Islam you follow. The current stuff popular in Saudi Arabia (typically regarded as an ultra purist version, though that might be self label rather than practical) would appear to prohibit such things, related and just a website so potentially iffy but https://www.parhlo.com/name-changing-after-marriage-in-islam/ (though as a quick search the referenced hadith is classified as sahih (highest level authentic) https://muflihun.com/ibnmajah/22/2707 ). I don't know what all the various schools of Islamic jurisprudence, or indeed those that skip such things, would say here offhand but it appears at least some do prohibit such things and have primary source justification for it.

In my state women can keep their maiden name. Personally I am taking my girlfriend's name when we finally tie the knot

Personally, I dont... If I could, I'd change of last name, let that name stay in the past...

I have a very long German last name that I've never been a fan of. My girlfriend's last name however literally translates to "Elf Ruler" and that's way cooler than mine.

It might not have been lies, though assuming what you have said in the past about her was accurate then it is not impossible.

I did a search earlier https://gbatemp.net/threads/hey-girls-question-for-ya.516586/page-2#post-8251005 and it appears there are interpretations, popular ones at that, which would forbid it (or more accurately dropping your father's name). Other interpretations are out there though and have different views, to say nothing of people being able to make their own interpretations of things (a fairly popular activity outside of the nominally Islamic countries, or indeed just the hardline ones).
