Is MCboot 1.8 incompatible with the newer ps2 slim models? I also have an older fat ps2 that the card works with but not luck with the slim. Any ideas?

Which model exactly? There are many revisions for Slim PS2.

Look at the bottom. If it says SCPH-9000x then you need to check the date code of that Slim. Only date code of 8A and 8B are guaranteed to work with FreeMcBoot. 8C is a maybe and anything else is a NO.

It's SCPH-79001
No FreeMcboot even though you have no disc inside while booting PS2? And you are using official memory card right (or ones that have MagicGate on it)? Have you tried both memory card slots?

In that case the person who installed FMCB on your memory card did a single install rather than multi install. Single install only works on the console installer used.
