I have to agree with
@DANTENDO here : what you're describing is about a textbook definition of 'indie studios', and it's not like they're an exotic breed at this point. For reference s, you might wanna start at the YouTube channel 'get indie gaming', but these days searching for anything indie easily gets you lists of the best of the least ten years.

Sorry, I didn’t explain myself properly. You’re right, there are tons of indie games right now, and indies are almost exclusively what I play these days. What I was hoping for was more games with indie scopes but AAA production values.
Take God of War 2018, for example. It told a straightforward, intimate story without much mucking around, a decent number of side quests that tied in thematically with the story and stayed focused, and it kept its world relatively small but densely packed with content. It felt like an indie game in philosophy, but I don't think an indie studio could have created something that visually impressive or with that much voice acting.
There are, of course, games that still come out like that. Off the top of my head, God of War 2018, Spider-Man, Odyssey, Breath of the Wild and Fire Emblem: Three Houses all stand out. But those are all console exclusives, designed as system sellers. I'm sure there are some examples of third-parties like that (Japanese companies are really all that are coming to mind for me right now), but they seem to be a dying breed and that's the problem I was worried about.
