I did basically what you did, although
step5 above I didn't get to choose a partition it just popped up saying found a valid partition so I clicked install.
My emuMMC folder is also on the first larger partition same as you.
So is the 32gb partition actually being used? possibly it's hidden or soft linked to the emuMMC folder. When you say emuMMC disk I assume you are referring to the second 32gb partition.
Turning my Wi-Fi on while booted into what I want to be my clean ofw appears to replicate when I boot into the cfw so not sure you're to fix that but I thought the system settings could be different depending on what you booted, especially Wi-Fi.

https://github.com/CTCaer/hekate/issues/250), so it's not currently possible to use emummc to get online. (You can boot into sysnand with ofw or cfw, or you can boot into emummc with cfw). Presumably this will be fixed in an update...

Okay, what I meant with step 5 "Select SD Partition", is that you needed to choose between the options that appeared > "File emuMMC", "SD Partition" and "Cancel" <, the "SD partition" option. If you only have one partition (not including the "base" partition), an option to choose a partition doesn't appear. I am not sure if I'm explaining correctly. If not, I can make you a picture of it.
About the 32GB partition being used or not, what I found when doing tests and things on the emuMMC, is that the 32GB partition it's not used as emuMMC, but as SD space. What I am trying to say, is that if you use Goldleaf, and try to install something, and you choose to install to SD, and then you go to manage data (I think that's how called in english?) in the Settings menu, you will see that actually, the game or program has been installed in the SD part. I can make you a picture too if I am not explaining correctly, sorry! Haha.
I am not sure if I understood what you are saying but this is how (I think) it works:

the wifi connection that you made in your sysnand, wouldn't be configured in your emuMMC, and vice versa.
I didn't know you couldn't get online with emuMMC. Based on what other people said, you could get online in emuMMC. I didn't read it explicit, it was just implyied in the context I was reading. Sorry for not being able to be of much more help! :/
And now, my opinion. Of what I have read, I think I know your setup. You have a clean sysnand and a dirty emuMMC, or at least that was your plan. That's mine too, and I think it's the most apropiate way of doing things, because if you need to get rid of a nand, I think it's faster that you just delete the emuMMC instead of restoring your sysnand into a previous clean sysnand.
