You can play with the spices and find your best combo over time, but the main thing to keep them together is to preheat your grill for about 15 minutes (and as others said an egg doesn't hurt). Preheating makes them not stick so badly and sort of seals the meat together.

I always buy a lot of cheap hotsauce (or some really good hot sauce you can dilute in water so more volume) and put it in a bowl, and soak the patties in there!

Then after their done, more hotsauce! I know, I got some preeettty diabolical plans thar.

when making them make a sauce of tomato paste, honey mustard and parsley. blend them. then get a container, dice some onions. mix the onions with the sauce and some breadcrumbs. then get some mince, mix the mince with the new thing you've created and you have patties that are ready to be shaped.
