You won't really need to block updates with fusee gelee and emuNAND. It will coldboot into emuNAND and from there you will be safe to update. At worst you accidentally update which breaks the cfw and you'll need to wait for atmosphere to update as well.And the Switch doesn't auto-update anyway. True. Even with warm boot that wouldn't be an issue, since the update notification doesn't appear immediately after powering on. Changing the DNS is unnecessary, just put it in airplane mode.

Last I checked (on 4.1.0), having airplane mode disabled BEFORE you put it in the dock works just fine. You can turn it off, but you can't turn it back on unless you take it back out.But airplane mode is disabled automatically when you put it in the dock, and of course you forget about those things...
You may also forget to disable Wi-Fi or set up the DNS.
Alternatively, open the console and rip away the Wi-Fi antenna.
