Answers in order (not an expert on this though):
-Any now, the latest was hacked recently
-You loose official support, warranty, etc, also open yourself to viruses, a future patch will probably erase the jailbreaking and could brick your phone
-You can get access to many more applications, ones that have been rejected or not submitted to the normal store, you can also tweak things like the message tones
-Yes, I remember someone telling me though if you do brick it and you have a backup on your computer (via iTunes) you can restore it, but I would look that up
-No idea, my is staying the way it is
-Search google for the guides
-You can do things you couldn't before
-Yes, it would be daft if you went through all that for the basic phone features to stop working
