What's the advantage of this over just getting the NSP from the server?

There is no advantage , just if you got some *.XCI games that you downloaded by mistake you won't have to redownload them a Second time :)

Forgive me if this a tad off-topic, but what are the benefits of using .nsp over .xci?

As long there is no emuNAND, you still need to buy a second switch to avoid a ban.
A shame that atmosphere 0.7 won't have it, hopefully it will be implemented not long after the first official release.
The switch doesn't appear to have directories to distinguish between the switch unique encryption keys, so one will probably need an additional microSD to use the emuNAND without affecting the sysNAND.

I've heard that some games never got a store release. Hence, no natural NSP would exist for those games.

You install a .nsp. That's the biggest risk.
