I thought updating to 4.2 stubbed the ios that bootmii is installed to so that boot2 is rendered unusable, but you can get it back if you delete that ios and then reinstall boot2, right?

Boot2 bootmii is NOT installed to an IOS. It is installed to 2 blocks of NAND in the boot2 sector of the Wii. The 4.2 update updates your boot2 to boot2v4 which overwrites it with a normal boot2, but it does not remove the bug in boot1 which allows you to install bootmii to boot2. So you can simply reinstall bootmii to boot2 without having to remove anything.
