Some notable examples: Take a look at all the different versions of Tomb Raider: Legend or Rayman 2. You had Game Boy versions that were completely reimagined from the ground up, DS versions that were like the Game Boy versions but with weird 3D touch screen mini games, and full console versions that were somewhat different from one another just because of their hardware differences. It's really fascinating.

Like, did you know the original Xbox version of Tomb Raider: Legend flat-out doesn't have the opening flashback cutscene just because they forgot to add it before sending the game to the ESRB? XD

I agree, a great example was the tie in games for the movie Eragon (really underrated, both the movie and the games). The PC and home console versions had you go through the story as Eragon (protagonist), but with it changing every now and then to control some other stuff or dragon chases, while the PSP version went through the story as Sapphira (the dragon) mainly instead.

These things were really nice, too bad now they always try to be as similar and generic as possible...

I loved how LEGO Island 2 was completely different on GBA. Oh, and I've always wanted to try the Xbox version of Wall-E. I own the PC version physically and from what I've seen, the Xbox version was a 3D puzzle platformer, just like the PC version but with different mechanics and levels.
