You could take a look at how other homebrew that support Japanese do it, such as TWiLight Menu++ or GodMode9i, both are based on the same code but GodMode9i was fairly heavily modified to A) automatically align to a grid and B) use GodMode9's FRF instead of NFTR.

Their code is GPL3 and the font code is relatively portable (I use it as a basis for most of my apps, like Wordle DS) and is fairly competent, it even supports BIDI text for languages like Hebrew and Arabic.

It is also possible to do a very limited version of Japanese with just the normal printf, using a custom font such as this, you can print the characters above ASCII fine, such as in this Example:
