I played the GOG release of 1 on PC, then 2 and 3 via the Xbox Series XS BC version of the MGS HD collection. Worked really well for me, would recommend.

I'm leaning toward the HD/Legacy Collection but I'd probably go with the PC versions if they were still available online (preferably GOG). It seems Konami are still dragging their feet about putting 2 and 3 back online.
Has anyone played both versions and noticed any significant differences? Usually PC is better, but a lot of PS1/PS2 era PC ports end up being worse than their console counterparts somehow.

Refer to my post from earlier for the best versions. I can explain why here.
MGS: Go with the PS1 version. The PC port is pretty bad, the controller remapping is not very good and you can only use an analog stick for movement (the game only has digital movement and was meant to be played with DPAD so it feels like shit). The PC version also falls short by not fixing the texture warping found in the PS1 version if that's something that bothers you. If you emulate the PS1 version you can remove the texture warping, as well as adjust various features like internal resolution.
MGS2: All versions are pretty good, but the PC version with V's fix (https://github.com/VFansss/mgs2-v-s-fix) is the best for having the most amount of customization and is easily the best version of the game. I will note that the PS2 version of Substance is the only version of the game to include the skateboarding minigame. ()
MGS3: The HD collection version is really the only good way to play this one. The original PS2 versions of this game are capped at 30fps with no progressive scan option, so you are stuck playing in 480i. Enough said. (Similar to MGS2, the HD versions of the game are missing silly bonus content, and are missing the guy savage hidden game. )

You might want to add Twin Snakes to the equation, look up online the differences between it and the original (PS1), and go with the one that appealed to you. The differences is not just about the graphics, there are some gameplay elements that you might not like from the original (or vice versa), again look this stuff up online..
Otherwise, the MGS HD collection on either PS3 (Legacy collection), or Xbox 360 (though no MGS4 on the 360) is all you need, both have Peace Walker which is canon too.

Thanks for your input, everyone. I've decided to go with the PS3 collection for now. If I replay them in the future, I'll have the PC versions to look forward to (assuming they're back on the usual platforms by then) and possibly the 3DS version of MGS3 and whatever other ones had cut bonus content. I don't really mind missing stuff on a first play through since I'll have new content to look forward to if I like them enough to replay them.

One thing that just occurred to me.... The sound on the 2600 sucked less back then the harsh sound we hear now is from infinitely better speakers we have now, back when the 2600 was new speakers produced a almost muffled sound, like CRTs made old graphics look slightly better. -

I think a few of the early systems could benefit from that, at least up to the 8 bit generation, by the 16 bit generation I think TVs had gotten a lot better in almost every way

Just give it a try, but honestly if you have a 3DS you can play DS games without a card just off the internal SD card
