Can you do more then just texture modding for the switch games?

I wanna make a mod for the game SMT V by adding new items, changing yhe affect of skills,, changing bosses attack patterns and values, etc. I wanna know if this is possible before I try

depends of the game, some have complete mods (Skyrim).
other have reskins.
also depend of your motivation and available tools to do so (or your capacity to create tools and reverse game files.)

First is to dump your cartridge and unpack NCA files

It's absolutely possible. Someone wrote a complete online multiplayer for Super Mario Odyssey. But don't count on finding anything ready for such modding, you will likely have to reverse engineer the game yourself (as stuff like what you want to modify can be in data files as simple scripts, but could also be part of the executable).

Iirc SMO had symbols left in executable in 1.0.0, that's why it was possible in the first place I guess as this helps tremendously.
