I got the .nsp file to install with Tinfoil after finding out the game would load faster if I installed it. While installing, I selected 'ignore firmware requirements'.

The game crashed when I tried running it in the original firmware, and just didn't start and froze when I pressed the Home button in custom firmware.

I then found out I had to have firmware version 8.0.0 installed to allow the game to overclock to 1.75ghz. I got the binaries and used ChoiDujourNX to install them, disabling AutoRCM for fear my Switch would brick.

I then installed the update again; this time with Goldleaf, and the game did exactly the same thing it did the first time.

Can anyone tell me the correct method to manually install an update?

The correct way is to JUST install it via Tinfoil/Goldleaf/Awoo. Maybe your update file is corrupted or something, try finding a new one somewhere. And why did you think your switch could be bricked cause of choi update?

AutoRCM bricks any Ipatched Switch that runs the exploit, and I didn't know if my Switch fell under that category.

Maybe your update file is corrupted or something, try finding a new one somewhere.

We can't tell you where to get the file. It is illegal. Google is your only friend. That's all we can do.
