If it crashes when you are loading the game or the save, it's definitely just a corrupted save and you messed it up
Don't forget that it's not just the gender that needs changing, the clothes need too after all, you need to change way more than just 2-3 values to gender swap! Just start a new game, much simpler honestly, game isn't that long anyways after all and less risk of save corruption...

I am definitely not an expert at this--I have only known about PKHeX for a couple of weeks now and that was to give my five-year old sun a Dusk Lycanroc in Ultra Moon. If you've used another method to alter your save file, I am confident I know nothing about it.

I'm not sure why you would hex edit the save for that, just load your save in PKSM and you can swap the gender easily with that.
If your completely shitless on what your doing here. Why are you even here trying to mod things you shouldnt be?
