The airplane mode has always been deactivated. It only lagged very strong when something moves in the background...
are you playing on a Switch Lite? Ive been playing the game since a week before launch on both default AMS and SXOS, and the only time the game lags is when playing online with other people running around in the Wild area, the first 10 minutes at the beginning of the game the first time everything loads (which is still minimal at best) and when you play the game with airplane mode turned on which KILLS your performance even on an unmodded Switch
