The hb appstore version is very stripped down and you're supposed to use the online updater to grab what you need. I've never used it and always do a full download from libretro so can't really help.

Just leave this also here if someone is Interested:

You can find the latest nightly RetroArch Build here
If you want your Roms to show up properly, then you need to create a Playlist.
Make sure that your Folder Structure looks similiar to this:

Roms
|_GB
|_GBA
|_SNES
|_etc.

Copy your Roms to the corresponding Folder.
Open this Site in your Internet Browser .
Now for example, go into your GB Folder and press CTRL + a, drag and drop all the Roms into
your Internet Browser.

1.png
2.png
3.png

Repeat this Process with every Rom Folder.
Copy your Playlist.lpl Files to the retroarch\playlists Folder.

If you also want the Thumbnails to show up, then you need to name your Playlists like their corresponding Folders are named in the retroarch\thumbnails Folder. (If there's no Thumbnails Folder or no Thumbnails inside, then open RetroArch --> Online Updater --> Thumbnails Updater --> your desired System(s).) (You can also download the PC Version for this Step...)

Now Open RetroArch and check your Playlists for Missing Icons. Write down all the Games that have no Icons. Go into your Rom Folder and copy the Title of the Game and head over to the ex. retroarch\thumbnails\Nintendo - Game Boy\Named_Boxarts Folder and look for your Game.
Rename the GameIcon.png so that it matches your Game Title. (If there's no Icon, then you can download any Picture and rename it to your Game Title just make sure its .png you can also resize it).
If for some Reason the Icon still wont show up make sure there's no & in the name. If there's an & replace it with an _ .
BTW this Tutorial should also work on other Plattforms than the Switch.

I've never really used RA before, so don't know my way around the menus. I've got it working fine on my Switch but how do I get my custom screenshots to show up? Let's say I have an NES romset, where do I put my NES screenshots and get them to show up in the UI? Is there a naming convention I have to follow, etc? Thanks.

Thanks, I was being stupid thinking Thumbnails was not related to Snaps

So RetroArch\thumbnails\bnes\Named_Snaps - will do it for the bnes core?

No in your case it should be RetroArch\thumbnails\Nintendo - Nintendo Entertainment System\Named_Snaps.

But better let RetroArch do the Job. You can download the PC Version of RetroArch to download all the Thumbnails. Its much faster on PC! Just copy the Folders to your Switch and your'e done!

Ahh, yes - I just downloaded the NES set of images inside my PC version of RetroArch. It downloaded and extracted but nothing is coming up.

You need to make sure the Rom Name matches the Image or vice versa.
Maybe you also need to enable Thumbnails in RA Settings --> User Interface --> Appearance --> Thumbnails + Left Thumbnails?!

Thanks for your help - my LaunchBox settings were overwriting the default RA ones - all sorted now :)

I have a small problem with button config in MAME 2003 core. How to unbind a button in an in-game MAME menu? I tried every button, but I can only change buttons, but not unmap a button.
If you want to remove some button assignments, just use one button like Like L3 or R3(a buttom that you never use) and change all the buttons you want unmap to that buttom. Works sort of like delete, since there's no other way.

Or delete the cfg file and start over.

For N64 make sure you're using Mupen64Plus-Next, you'll probably need to overclock too for most games (In Retroarch main menu)

And don't access through album you need to hold R on a switch installed game which instead of launching the game will take you to homebrew menu, and launch Retroarch from there.
