Just a few interesting changes I found after updating:
- When docking the Switch while in sleep mode, the actual charge level will be displayed (as opposed to just a charging icon before)
- The top-left notification rectangles have been made more transparent, not to mention the rounded edges when setting volume

You can now press Y on the Friend List to update it 
The WiFi icon now has a different appearance when the system isn't connected to a network
"Played for a few minutes" has been changed to "Played for a little while" on the Profile Page screen
You can now quickly switch between different keyboards
The battery icons have a thinner frame than before
Parental Controls now has a video guide, I guess?
The icons also changed when setting it up
The Switch now supports automatically selecting the most suitable HDMI audio output
The lock screen has been completely revamped
