Pretty much the entire Apogee/3DR library. Be sure to check out Stargunner!

The Goblins series: Gobliiins 1, Gobliins 2, Goblin's Quest 3.
The King's Quest series, especially 6.

This is pure top of my head stuff here
Issac was right on with the 7th guest (and 11th hour if I recall), some top notch puzzles.
Elite (also the sequel frontier: http://nic.dnsalias.com/ (runs on my new machine as well).
Dark Forces
Dune: Battle for Arakis
Carmageddon
Any of the other big doom engine games (wolf3d, duke3d or later redneck rampage)
Kings Bounty (precursor to the heroes of might and magic series).
I think this was a 95 only title but I will end with dungeon keeper.

Epics Tyrian was great too, there was a GBC version in development and was nearly finished but got canned due to the arrival of the GBA. Shame the developers don't put it out on the net for us to see.

OMG how could I have forgotten Raptor? I loved the graphics on that vertical scrolling shoot-em-up-and-buy-upgrades-while-you're-at-it game...

And Leisure suite Larry and Carmageddon 1 & 2 - classics.

I wish we would get a DOS emulator for the DS... would be great to replay some of these games on my DS...

Probably listed already but I'm not going through 4 pages of bunk...

Wing Commander 1 and 2 (and their pairs of addon stages.)
Tie Fighter
X-Wing
Indiana Jones and the Fate of Atlantis
Commander Keen 1-6
(the ever classics) DOOM1/2, Heretic, and Wolfenstein-3D
Ultima Underworld
Star Control 1 and 2
Quake
Links386 (various versions)
M1A1 Tank Platoon
Hi-Octane
Magic Carpet 1 (not 2...2 sucks)
Prince of Persia 1 and 2
Dune 2
Command and Conquer 1+addon (still the only one I felt was perfectly balanced and fun)
Into the Eagles Nest
Infiltrator 1 and 2
Road Runner (arcade port)
Gauntlet II (arcade port)
Stunts
Leisure Suit Larry (in particular 6)
Comanche (1st one)
LHX Attack Chopper

...yes I'm aware the arcade versions of those type games are nicer, but they're damn fine for the day, real stand outs. Also WC1 and 2 are playable in WinXP if you can find Disc 1 of the 'Kilrathi Saga' ...2-4 are stupid Wing Commander 3 which stank.

I remember playing the hell out of that stuff, many more but those are coming to mind at this moment as I don't want to think over it for the next 30-60min looking up stuff.

Looking at the wikipeadia list of DOS games mentioned a few posts ago I remembered a few goodies:
Bioforge -astounding animation and graphics
Stunts -driving game where you edit the tracks for stunts, this game lasts forever
Dreamweb - you play a hero/mad man who is ordered to assasinate people in his dreams to save the world

OMG, thanks for mentioning Tyrian. Been on my mind since I started looking for retro shmups to play, couldn't think of the name to this game for the longest time.

I am currently going through a DOS game frenzy, and I believe DOS games are more interesting/solid than today's standard video game.

Nope. It is just that after all these years, all the crap has been filtered out and forgotten while the gems are still well known. Just wait 10-20 years and there will be a list of games that is just as long from this period which were considered classics.

That being said, for all the AGI, SCI and SCUMM games, there are all recreations of the engines available to help you getting these running (SCUMMVM being the obvious one, just incase you weren't sure what I was referring to). AGI is the engine for all the older Sierra games, with SCI being their replacement engine for their later ones.

I think most of the games I would recommend have already been said, but one I haven't seen (although I could have missed it) is the Eye of the Beholder series, in particular number 2.

I don't know if anyone mentioned it yet, but Simon the Sorcerer II was fun too. Hi Octane was also great (already mentioned, but deserves to be mentioned at least twice).
