Nooooo you're not supposed to go out of the interface that'll clear the adresses value. You stay in that interface just press C to clear the value to 0 so you can type in another.
With that said it should be doable pretty quick it's not hard to find :)
Oh, hahaha, ok, oops. I'll go do that now.

It's not possible to freeze values directly within the Hit list yet, right? We have to input the code into the .txt, and enable the code to actually freeze the value?

You can use the cheatlist editor
Precisely; we can't actually freeze a value if it isn't already written into the game's cheatlist. What I want to be able to do is to freeze a value that is found through the cheat search in real-time. Maybe it's possible within the Hex-Editor; I haven't tried that yet.

Yes you can. You simply open Cheatlist Editor. There you can add cheats to the list on the fly without having to do anything on your computer.
Let's say you found a value for coins at 0x1756b0a4 and want to freeze it to 255 or FF.
Open your Cheatlist Editor and simply edit in
D3000000 10000000
2756b0a4 000000FF
It's definitely a bit of a hassle to type in on the 3DS and could probably be made more simple but that's the easiest way right now

Ahhhh, I see what you and @ken28 are saying now! So I have to input the address and the bytes through the cheatlist editor; I thought you can only edit pre-existing cheats in the .txt, not the "DEADBOOB" characters. Definitely isn't as easy as, say, pressing R in the hit list or hex editor to freeze a value, but it'll have to do for now. Thanks!

what exactly does D3000000 10000000 do?
That's simple to explain.
D3000000 10000000 sets the offset to 10000000
2XXXXXXX 000000YY writes the byte YY to XXXXXXX + offset.
Since Gateway needs the first number of the first 8 digits of the code as an identifer to actually know what it does 2XXXXXXX 000000YY you won't be able to fit the whole adress we want to write to in there
1756b0a4 is 8 digits long but we only got 2XXXXXXX seven
so we first set the offset to 0x10000000 and that makes our code add 0x10000000 to 2756b0a4 000000FF
0x10000000 + 0x0756b0a4 = 0x1756b0a4
so in the end it therefore writes to 0x1756b0a4

Yep as i said it's a bit of a hassle but that's the best you can do right now. Maybe they'll add that in a later update. It would really make testing the values found easier...

and how can i find out when do use an offset?
Well when you find your adress and it's longer than 7 digits you'll always need to use offsets except for the data register codes since for these you have enough space to type out 8 digits because the offset has 8 digits for input available with these types of codes.
example: D6000000 XXXXXXXX keep in mind though that the data register codes also add the offset to XXXXXXXX though.

So if you previously set the offset to 0x10000000
and now want to write the data register to let's say 0x1834FBA4 you will need to either do this
D3000000 00000000
D6000000 1834FBA4
or
D6000000 0834FBA4

Just read this trough and if you have a bit of understanding of this stuff you should be able to make your own codes
Memory Writes:
0XXXXXXX YYYYYYYY – 32bit write to [XXXXXXX + offset]
1XXXXXXX 0000YYYY – 16bit write to [XXXXXXX + offset]
2XXXXXXX 000000YY – 8bit write to [XXXXXXX + offset]

Conditional 32bit codes:
3XXXXXXX YYYYYYYY – Greater Than (YYYYYYYY > [XXXXXXX + offset])
4XXXXXXX YYYYYYYY – Less Than (YYYYYYYY < [XXXXXXX + offset])
5XXXXXXX YYYYYYYY – Equal To (YYYYYYYY == [XXXXXXX + offset])
6XXXXXXX YYYYYYYY – Not Equal To (YYYYYYYY != [XXXXXXX + offset])

Conditional 16bit deref + write codes:
7XXXXXXX ZZZZYYYY – Greater Than
8XXXXXXX ZZZZYYYY – Less Than
9XXXXXXX ZZZZYYYY – Equal To
AXXXXXXX ZZZZYYYY – Not Equal To

Offset Codes:
BXXXXXXX 00000000 – offset = *(xxx)
D3000000 XXXXXXXX – set offset to immediate value
DC000000 XXXXXXXX – Adds an value to the current offset

Loop Code:
C0000000 YYYYYYYY – Sets the repeat value to ‘YYYYYYYY’
D1000000 00000000 – Loop execute
D0000000 00000000 – Terminator code

Data Register Codes:
D4000000 XXXXXXXX – Adds XXXXXXXX to the data register
D5000000 XXXXXXXX – Sets the data register to XXXXXXXX
D6000000 XXXXXXXX – (32bit) [XXXXXXXX+offset] = data ; offset += 4
D7000000 XXXXXXXX – (16bit) [XXXXXXXX+offset] = data & 0xffff ; offset += 2
D8000000 XXXXXXXX – (8bit) [XXXXXXXX+offset] = data & 0xff ; offset++
D9000000 XXXXXXXX – (32bit) sets data to [XXXXXXXX+offset]
DA000000 XXXXXXXX – (16bit) sets data to [XXXXXXXX+offset] & 0xffff
DB000000 XXXXXXXX – (8bit) sets data to [XXXXXXXX+offset] & 0xff

Special Codes:
DD000000 XXXXXXXX – if KEYPAD has value XXXXXXXX execute next block

SPECIAL KEYPAD CODE
===================
As for the Special KEYPAD cheat code, the keypad value can be any combination of the following:

0x1 A
0x2 B
0x4 Select
0x8 Start
0x10 Right
0x20 Left
0x40 Up
0x80 Down
0x100 R
0x200 L
0x400 X
0x800 Y

Those aren't real gateway codes. Sorry but if these are AR3DS codes i can't tell you since i haven't read its documentation.
What are they supposed to do?

It might be tricky to understand. And would probably be easier with a real example that you give me.
Try finding a value, check that it's the real adress by editing it in the hexeditor and then give me the adress and tell me what you want to do with it as a code and i'll show you how to write it out.
