So, I haven't used my Vita in a while, I decided to check what demos were in the store just for the sake of it and was asked to update my firmware to 3.52.

Before doing so, I decided to check what the differences were, since I haven't updated it in a while (3.36), and found out that a CFW was released recently.

Ok, so I am definitely not going to update to 3.52 now, but is there any reason to keep it at 3.36, or should I update it to 3.51? I probably don't put CFW on it right away as I want to see what else the hacks can lead to first.

The WebKit exploit is being worked on for 3.36. From what I read, it won't work above 3.36, but they're hasn't been any updates in about a month, since Rejuvenate happened (http://yifan.lu/p/rejuvenate/). There are no CFWs for the Vita (yet, besides the eCFWs). If you update to 3.52, you will NOT be able to use Rejuvenate. Rejuvenate for PSM Dev Unity is going to be happening soon, so I suggest sticking to 3.36. Updating to 3.51 is fine if you don't mind missing out on the WebKit exploit, but I suggest you keep it below 3.52.
