just run the game when you are on the newest Fw and connected to the internet
and the ps3 will find the updates and tell you to d/l it

Updates are provided via the Playstation Network by the developers. If you're not running CFW, you have no way of updating the games on the PS3. On a CFW, search the internet for instructions. As I don't have a CFW PS3, I can't help, but AFAIK there should be a way to install the update .PKGs with a CFW package installer. Otherwise, nope.
