Will sharing a dock between an OFW switch and a CFW switch get the OFW banned?

(Disclaimer: I am somewhat of a noob when it comes to the CFW scene.)

I've seen that recently they added an "Update Dock" option. I am wondering if this new option would get my OFW switch banned.

Short andwer: Impossible.

You should be able to update it via CFW as well. But only the new OLED dock can be updated, not the previous one. So, assuming you don't have own an OLED model, then the short answer for this is that you will never update the dock, so don't worry about that.

If im not wrong you can only update the firmware on OLED docks, old docks does not have the option to be updated.
My switch is one of the first available (around the first 6 months of release) and offers an option in the settings for a dock update, but there's never any update to be found. Not sure what an update to the dock would do to benefit things though to be honest.

Short answer: No. Long answer: We can't be 100% sure, but we are 99.9999999999999999999999999% sure that no.
Except for the OLED dock, which actually can be updated, in which case maybe.

Probably this option was included in an update for the OLED model's dock and wasn't hidden in the original model's firmware because it's possible to use an old Switch on a new dock. The original dock has nothing to update, so if that's what you have, you can ignore the option.
