I have a stock Switch for online play and a SX core Switch for everything else. A friend who only has one Switch wants to install SX core. She has no intention play homebrew at the moment. Based on current FW 10.2, can Nintendo detect SX core when play legitimate games online on OFW?
No. But they don't care about that.
They care about piracy. So it doesn't matter if you're playing legit online or not. If you connect online while having played a pirated game, you will be banned.
To be safe you'll need to run emunand/sysnand set up. Emunand for the piracy (with SX Stealth enabled), and then run sysnand for everything legit. It will act similar to dual booting on a PC.
There's already several threads on how to exactly set all of this up, so I'm not going to go into more detail.

Yes. I know how to setup emunand. But It is my understanding that at least for sx core, boot0 is modified so Nintendo can tell you have mod chip installed even if you setup sysnand to run OFW. Not to mention there is boot.dat file on your SD card. So has anyone got banned for just having modified boot0 and malicious file on SD card alone?
