Haven't played a ton of ps1 games, but here are a few ones.

Castlevania: Symphony of the Night
Destruction Derby
Final Fantasy 7 (Played it only for about 2-3 Hours)

Ironically for me Final Fantasy 7 was or is my first PSX games for the Playstation. Of course I re-played that game more times then I can count.
The weird thing about that is anyone who played Final Fantasy VI first myself included thinks its way better than Final Fantasy VII anyone who played VII as their first Final Fantasy thinks its the greatest game ever. For me all VII had going for it was the surprise death at the end of disc 1 and that was nothing new it had already been done in a few Dragon Quest games and some other JRPGs

I personally try to avoid PAL copies as they seem to run slower than NTSC-U/J.

Why does everyone keep saying Final Fantasy VII. Six is way better and also available on the PS1. All VII has going for it is the surprise death at the end of disc 1 and that had already been done in other games including Dragon Quest.

The PS1 version of FFVI was a bit rubbish compared to the SNES version though, frequent slowdown etc, and would if nothing else appear a bit dated and old skool to people who started on VII. Otherwise, fully agreed!! VII won't appear on my top 5 PS1 game list of course,
Final Fantasy Tactics would though! Along with:
WipEout 2097
Tekken 3
Gran Turismo 1 (I know.. 2 is 'better', but I just loved the first more)
Suikoden 1 (I know.. 2 is 'bett-ooh, deja vu..)

I don't even think I can make a good top 5 that many people will agree with, but here are some games I had (and still have) a decent amount of fun with.

Tony Hawk's Pro Skater 2
Dino Crisis
Crash Bandicoot (3) Warped
Pocket Fighter
Tekken 2 (I might eventually pick 3 over 2, but I have played 2 more and have a solid opinion on it; 3, not so much.)

Tekken 2 was excellent, but I prefer Tekken 3. I reckon it's because it's the one I grew up with although I did play T2 too while not as much as T3.

Still to this day, I play Tekken 4 on my PS2 Slim and it's kind of my favorite Tekken game. If I bothered to have a PS4 then I'd probably say Tekken 7.

I'm more of a SoulCalibur person these days. I have TEKKEN 7 chilling in my Steam library. I'll have to play it sometime, lol.
