Hey everyone.

I'm a noob with the Wii U, but have used guides and info from here to put CFW on my Wii and 3DS. Wanting to get into the Wii U with cold boot haxchi, have some questions.

What is the most recent, up to date guide to instruct on hacking the Wii U?

Do you still have to buy a DS game (from the list of games) in order to hack the Wii U? Is this still necessary?

Can you use a USB hard drive to put games on?

How do I find out how to set up the USB hard drive for this use?

Still a 300 game limit? Does a USB hard drive not solve this?

How big of USB hard drive should I get?

Lessons on injection for the N64 injects? Where can I read up on this?

There are plenty. Look for the sticky ultimate guide thread somewhere around here.
In short: Buy a Haxchi compatible DS game (or use Browserhax and Mocha) and install/run any games you want.

You never "had to". You can also use Browserhax (browsing to loadiine.ovh from the Wii U browser while having Mocha CFW on the SD card). Haxchi is much better though.

Yes.

Just connect it to the Wii U and let it format it. Everything on it will be deleted (obviously) and you can't use it for anything else but your Wii U.

There never was a 300 game limit in regards of having games installed.
There's "only" a limit of how many icons the main menu can show. Installing more than 300 would cause some to disappear. They are still there though. You can launch them via System Config Tool (which you would have to find yourself). This already includes a USB hard drive obviously as I can barely imagine someone installing over 300 titles to the internal memory (might work with only VC injects maybe).
How big of USB hard drive should I get?
That depends on how many (and which) games you want.
Since you're asking for the 300 limit I think you might wanna get the biggest possible size which is 2 TB. You can't use any drives bigger than 2 TB. In fact you can, but the Wii U will format it to a 2 TB partition and leaves the rest unusable which would be a waste of money.
Lessons on injection for the N64 injects? Where can I read up on this?
Dunno about that. There are threads about that. I'm too lazy to look for them as I don't care but you should find them really quick through Google.

One more question about injections. I remember a little about these from my 3ds CFW experience, but its been a long time.

A bunch of N64 games seem to not work well with injections. Most notable examples are the Star Wars N64 games (and I own all of them on my old N64). Does the Haxchi thing have a good N64 emulator that will run the ones that don't work well from injections?

Sorry if I'm not speaking the lingo well here.

Also I'm looking at the Seagate 2TB portable USB hard drive. Anyone know if this works well or not? Amazon reviews mentioning Wii U mostly like it (with the Y cable), but some say it doesn't work!

Some injects won't work. Haxchi doesn't change anything here. Haxchi just "enables hacks" (by bypassing signature and region checks).
A portable (aka 2.5") drive should be fine but you definitely need a Y cable, otherwise it won't have enough power to run.

There's an emulator for the vWii that seem to run almost all of them. You can inject this emulator into a Wii U title and install it to your homescreen (on the Wii U) to even benefit from a higher CPU clock speed.
