How would someone even go about doing that...
and from the Nintendo event I went to, they had people watching what you were doing at all times and the switches themselves weren't accessible.

No. Nintendo learned from their mistakes ages ago.

Some employee will stand with eagle eyes behind you and the second you try to do something you aren't supposed to do, he will whisper "gotcha" in your ear and make disgusting tongue lashing sounds sprinkling saliva all over your face.

Gosh I wish just replying lol wasn't against the rules. There's a reason dumping the BotW demo failed, there won't be a sudden miracle this time.
It wasn't dumped because the WiFi was shit and it was taking too long to move over the network.

This thread should be deleted. There's 0 chance that:

1. Nintendo will leave the USB port open on the demo units.
2. The system is on 1-3 to execute Pegaswitch.
3. Someone will be able to execute the long dump process without being noticed
4. The microSD slot will be accessible to random people.

How did they even try to do that?
Had a kernel exploit for the dev units and ran FTPiiu in the background over the Wi-Fi they had set up in there, or maybe it was a hotspot and just file transfered it over.
EDIT: It might not have been FTPiiu, maybe TCPGecko. I don't remember

Just imagine it, someone goes up there, launches TX/Atmosphere with their phone/a donge/etc. putting their microsd in and dump the smash demo. If someone managed to do that, that would be a hero lol.
But to answer your question, no, the staff there would have to be more than stupid.

Unless any of the tempers in here work for E3/Nintendo and want to risk their job doing this on a demo unit and also presuming that the demo units can easily be hacked I highly doubt it They don't use retail Switches so RCM bug could not work anyways.

You would basically need SciresM himself undercover as a Nintendo employee at the event, to reverse engineer those units so no.
