First of all this method is not fully tested and might not work if Wii U has a Standby mode enabled or alredy done the update process and I take no responsibility if your Wii U gets bricked by doing this.
When you get a message that tells that system update is available, dont press anything instead power off console by unpluging the power and plug it back again, then power on the console and hold B button to get to vWii mode, from there (i actualy had a crash/freeze from vWii homebrew by messing with it but dont know if that is important :/) go back to Wii U mode and the system update window should not appear and firmware should still be on 5.5.1.
Also at this point you would want to remove update files to make sure to prevent any system updates, probably by using ftpiiu_everywhere.

Can't you just do DNS code things? I tried to look for them but I can't find them

Yes you can, but because for summer I moved to other place and changed network, I forgot to add DNS block for new network to prevent updates
See my post above for the guide to disable Wii U updates without DNS. It involves editing the NAND, so you don't need to worry about re-adding the DNS each time you change networks.

Or you can prevent updates by blocking URLs from router, what I done right now.
here list:
  • nus.cdn.c.shop.nintendowifi.net
  • nus.cdn.shop.wii.com
  • nus.cdn.wup.shop.nintendo.net
  • nus.wup.shop.nintendo.net
  • nus.c.shop.nintendowifi.net
  • c.shop.nintendowifi.net
  • cbvc.cdn.nintendo.net
  • cbvc.nintendo.net

thx to FlimFlam69 for giving this

Editing one's NAND is inherently risky, but this specific edit carries minimal risk and has been proven to be stable and effective.

I'm more surprised that it hasn't been mentioned all that much prior to a couple of days ago, probably for that inherent risk methinks.

I have that setup as well, but it makes downloading from the eShop a royal pain.
