I thought once we softmod the wii u we ain't allowed to run any updates, as this will block the wiiu
I followed one of the YouTube instructions and it says to disable the wiiu connecting to the web
If you don't have CFW on your WiiU, then follow Kafluke's Noob Guide, the link to his guide is in my Signature.
However, you don't need CFW (Custom Firmware) to install and play BOTW and the BOTW Update (v97/1.3.0). Custom Firmware is required to install and play DLC and EShop ONLY games and content.
If you don't want the DLC, then just download the latest BOTW Update from USB Helper, or just unblock System Updates and update BOTW normally like any other game, then after its updated, block system updates again. As of the time of writing this post, the latest WiiU Firmware is 5.5.1. So if your already on 5.5.1 (which you should be already), then your safe to unblock system updates to update BOTW to the latest version (v1.3.0).
But like I said, if you want to play DLC and don't have CFW on your WiiU, then follow Kafluke's Noob Guide to Wii U Hacking, the link to his guide is in my Signature.

Omg PLEASE do NOT follow a youtube video for modding/hacking the WiiU. You are just asking for a paperweight (brick).
When modding any console, always go right to the source for the information about modding that console. In this case, is GBATemp.net. You should always follow a written guide when modding any console, and make sure the guide is from the source, or at least from a well known source. Do your research, always read everything you can about the subject before you even think about doing anything to your console.
Please don't follow a youtube guide. Please.
