Nintendo generally does not design their emulators with link cable support (the one exception seeming to be the pokemon VC releases red,blue,yellow,(green)).

It'd be awesome if it was possible to take that link cable support from the pokemon games and put them in other roms that allowed for link cables. But, I don't think that's possible since..I would assume that the rom was edited in order to allow for link cable support.

Nearly every VC of a console left in the multiplayer for multiple controllers (especially on wii/wiiu)
It's possible if you have a disassembly, though there's limitations, and you lose save states
